Chia + Honey + Lemon Bliss Balls

Ingredients:

  • 1 tbs White Chia Seeds - set aside in a small bowl with 3 tbs water.

  • 1 Cup Organic Desiccated Coconut

  • 1/2 Cup Raw Cashews - soaked for a few hours (or overnight if you can)

  • 2 Tbs Fresh Lemon Juice

  • 1/3 Cup Organic Coconut Flour

  • 2 Tbs melted Organic Coconut Oil

  • 4 Tsp Grated Lemon Zest

  • 3-4TBS Creamed Rata Honey

Method

  1. Soak chia seeds in water to swell. Mix so they don’t clump.

  2. Mix remaining ingredients in a food processor.

  3. Add chia seed mix and pulse until ingredients have combined.

  4. Spoon equal amounts into the palm of your hands and get rolling.

  5. Allow to set in the freezer for at least 3 hrs.

  6. Enjoy and store in airtight container in the freezer for up to 10 days - if they last that long.
