Toasted Date and Chia Slice By Hana
18 months ago I met Chloe and CHIA, it changed my life...style! I was able to see the benefits of healthy eating and higher quality product with more clarity and the ease of giving up over packaged, low quality, cheap products was bliss. Even more recently my partner and I have moved to Queenstown and made new friends, ones who are very accepting of organic, raw, healthy living, so we having been mixing it up with plenty of evening meals without meats, daily consumption of fermented foods and of course, lots of CHIA.
I have put together one of mine (and Russell's) favourite slices that involves minimal effort and plenty of sustenance. Even the kids we looked after for a few days loved this recipe and were easily amused that it only took 'Haney' just a few minutes to whip up a delicious snack for their lunches. It is GF, DF, Grain Free, Egg free and yum yum yum.
Toasted Date and Chia slice
1 1/2 c Dates, soaked in boiling water for 15mins
1 1/2 c Desiccated coconut
1/4c Chia seeds soaked in 2/3c cold water (mix this often untill it is a gel like soft butter)
4T coconut flour
Preheat oven to 160 degrees on bake
In a food processor (or magic bullet in my case), process the soaked dates until they are almost a paste, you might have to add some of the water in whilst doing so. Put the desiccated coconut and coconut flour in a medium sized bowl and make a well. Place the date paste, soaked Chia seeds and Tahini into the well and mix together throughly. Pop onto a slice tray and spread until 2cm high. Bake at 160 degrees for 20-25mins, or until golden brown and the slice has risen slightly. Allow to cool in tray and then cut into 4 by 7cm pieces.
This makes a soft moist slice that still stays together in a lunch box. Usually I'd get 12-16 slices from one tray, but that's because Russ like a big slice in his lunch!
